This is Paola Abraini, one of the last masters of su filindeu, or Threads of God. For 300 years, people in Sardinia have walked 20 miles overnight to eat this rare, near-mythic pasta. Threads of God is made of hundreds of intricate strands, each less than half the width of angel hair, criss-crossed over one another.
